Gluten-Free One Dish Meals: More Flavor, Less Mess! What’s Not to Love!

Dinner time rolls around and its time to start asking everyone what they want to eat. You get the same requests every night for, “whatever you want”, “I don’t care”, “eww no!”, “I don’t want that”, or “I don’t know”. By the time you decide on something it’s later and you don’t feel like cooking or cleaning up a lot of dishes. You might even decide to go out to eat or order in. 

I live out in the country and we don’t get deliveries here or want to drive for 30-45 minutes to “grab something.” 

I make meal plans of our usuals and go to the grocery store once a week. I plan for breakfast, lunch, dinner, and snacks every week and sometimes I just want something simple to throw in the oven that hasn’t already been cooked then frozen. If you want something easy that the whole family will love without using every pot or pan in the kitchen then this is for you.

Here are two of my favorite Gluten-Free one dish meals I make about every two weeks

1. Gluten-Free One Dish Baked Chicken 

Prep Time: 20 minutes. Cook Time: 3 hours. Heat Oven to 400 degrees.

This is one of my own inventions that I have slowly perfected through the years.

You will need…

  1. 2 Chicken breasts ( preferably frozen).
  2. 6 to 8 Carrots.
  3. 2 Cans of Green beans ( drained).
  4. 6 to 8 Potatoes.
  5. 1 Sweet Onion.
  6. 1 Stick of Butter.
  7. Weber Kick’ n Chicken Seasoning.
  8. Tin Foil

  1. Place 2 chicken breast in the middle of a glass pan. I like using frozen chicken breasts because as they bake they don’t dry out. It adds extra moisture to everything in the pan as it thaws.
  2. Add 2 cans of cut green beans to one corner of the glass pan. I drain the green beans before I add them.
  3. Dice up an estimated 6-8 potatoes and cut up approximately 6 to 8 carrots and add them around the chicken in the pan. I don’t usually measure how many potatoes and carrots I use, I just keep adding until I get the desired amount.
  4. Cut up a sweet onion and add it to the top of everything in the pan. You don’t have to use a sweet onion I just prefer them. I like adding them to the top so they don’t bake to the side of the pan.
  5. I am guilty of using an entire stick of butter. I cut the stick into 1 tbs squares and add them around the top of everything. This way as it melts it runs through everything and takes the seasoning with it.
  6. I love Weber’s Kick’n Chicken seasoning! I sprinkle this over everything and it gives this meal a great flavor.
  7. Last, I cover the glass pan with tin foil and stick it in the oven for 3 hours at 400 degrees. Then pull the pan out and everything is ready to be served!

I usually have leftovers and fry them for lunch in a skillet. It’s just as good a second time!

2. Gluten-Free Pork Tenderloin with Baked Potatoes

Prep Time: 15 minutes. Bake Time: 2 hours. Heat Oven to 425 degrees.

You will need…

  1. 1 Smithfield Pork Loin.
  2. 2 Large Potatoes.
  3. Butter.
  4. Sea Salt.
  5. Roasted Garlic and Herb Seasoning (McCormick Grill Mates Seasoning).

This is a very simple and delicious meal. It took me years but I finally made the perfect baked potato!

  1. Open the pre seasoned and marinated tenderloin and wrap it up in tin foil. I like to cook it frozen so it doesn’t dry out. Set the whole pork loin in a glass pan. That’s it!
  2. Wash 2 large potatoes and use a fork to poke holes in them. Set each one on their own piece of tin foil. Add sea salt and roasted garlic and herb seasoning. Place a 1 tbs of butter on top of each potatoe. Wrap up the Potatoes in the tin foil and place them in the glass pan with the pork loin.
  3. Set the pan in the oven for 2 hours and then everything will be ready to serve. Enjoy!

I also made gluten free biscuits with both of these meals. love this Red Lobster gluten free biscuit mix! I like the biscuits without the cheese. It’s simple and delicious.
